Recipes For Hawaiian Desserts

The two chocolate cookie recipes I post here are a little different then what we normally see and I think we will enjoy them.

Hawaiian Chocolate Chip Cookie Recipe
It This is a chocolate cookie with a touch of Hawaii.

Ingredients you need:
1 cup butter (preferably butter variety flavors)
3 / 4 cup sugar
3 / 4 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 1 / 2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 / 8 teaspoon salt
2 cups quick oats
1 cup coconut (grated)
1 cup macadamia nuts (chopped coarse)
1 cup chocolate chips or chunks

How to prepare:
Preheat oven to 325 degrees F. In an electric mixer and cream the shortening and sugar until light and fluffy. Add egg and vanilla, beating well. Sift flour with the baking powder, baking soda and salt. Mix flour mixture into the cream mix. Add the oats, coconut, nuts and chips. Shape into 1 1 / 2 inch ball. Place on greased cookie sheets UN and flatten with bottom of a glass dipped in flour. Bake for about 14-16 minutes or until lightly browned.

Double Mint Chocolate Chip Cookie Recipe
Keep your breath smelling fresh with these great tasting mint chocolate cookies.

Ingredients you need:
3 / 4 cup margarine
1 1 / 2 cups firmly packed brown sugar
2 tablespoons water
2 cups chocolate chips
2 eggs
2 1 / 2 cups flour
1 1 / 4 teaspoon baking soda
1 / 2 teaspoon salt
12 oz Andres mints (2 boxes)

How to prepare:
Melt margarine, add chips and stir until partially melted. Remove from heat and stir until chips are completely melted. Pour into large bowl. Add the brown sugar and water and cool slightly. A high speed, add eggs one by one. Reduce to low speed and add ingredients dry. Stir until blended. Chill dough. When ready to bake, line cookie sheets with foil. Preheat oven to 350 degrees. Roll dough into very small balls (about 1 / 2 teaspoon per ball). Place 2 inches apart and bake for 10 minutes. Remove cookies from oven and while still in pan, Place half a piece of candy into each cookie. Remove waxed paper, wait a minute and turn the pieces of candy at the top of the cookie.
