Phyllo CHEESECAKE CUPS
4 oz of low-fat cream cheese
1 / 2 cup reduced-fat sour cream
2 tablespoons Splenda
1 teaspoon vanilla extract
2 packages frozen mini phyllo shells (2.1 ounces each), thawed
1 can (11 ounces) mandarin oranges, drained
1 kiwi, peeled, sliced and each slice into quarters
In a bowl, beat the cream cheese, sour cream, Splenda and vanilla until smooth. Spoon mixture into the phyllo shells. Top each with a section of tangerine and a piece of kiwi. Refrigerate until serving time.
Yield: 30 tartlets
MACADAMIA NUT FUDGE
3 cups * crushed macadamia nuts, divided
Sugar 4 1 / 2 cups granulated
1 / butter 2 cup sweet
1 can (12 to 13 ounces) evaporated milk
12-oz German Sweet crushed macadamia nuts, place in a resealable plastic bag and pound top with a mallet or rolling pin.
Grease two 9-inch molds square or line with waxed paper. Combine sugar, butter, and milk in a heavy saucepan. Bring to a gentle boil. Cook for 5 minutes, stirring constantly. Remove from heat and add remaining ingredients except 1 cup nuts. Beat to mix well. Fudge Pour into prepared pans, sprinkle the remaining nuts on top of the fudge. Using the back of a large spoon, lightly press on Fudge nuts. Cool until firm. Cut into squares.
Note: Roasted Nuts are a good substitute for macadamia nuts, pecans, if desired.

CITY OF CHOCOLATE PIE
9-inch Shell unbaked dough
1 / 2 cup butter or margarine, softened
2 eggs, beaten
2 teaspoons vanilla extract or 2 tablespoons of Bourbon
1 cup sugar
1 / 2 cup all-purpose flour
1 cup semi-sweet chocolate chips or mini chips
1 cup chopped pecans or walnuts
Holidays Whipped Cream (optional; recipe below)
Prepare pastry shell; aside. Preheat oven to 350 degrees.
In a small bowl, cream butter, add eggs and vanilla and bourbon. Combine sugar and flour, add to the mixture of cream. Add chocolate and nuts, pour into the unbaked pastry shell. Bake 45 to 60 minutes or until browned. Cool for about an hour, serve hot. Garnish with whipped cream festive, if desired. Makes 8 to 10 servings.
FESTIVALS CREAM:
In a small bowl, mix 1 / 2 cup cold whipping cream, 2 tablespoons powdered sugar and 1 / 4 teaspoon vanilla extract or 1 teaspoon of bourbon. Whisk until the mixture hard. Yield: about 1 cup dressing.
PEANUT BUTTER CRUNCH COOKIES
1 / 4 cup butter, softened
Butter 1 / 4 cup creamy peanut
1 / 4 cup granulated sugar
1 / 4 packed brown sugar
1 egg
1 / 4 teaspoon vanilla extract
1 / 2 cup all-purpose flour
1 / oats 4 cup quick
1 / 4 teaspoon baking soda
Salt 1 / 8 teaspoon
1 / 4 cup Grape-Nuts
Preheat oven to 350 degrees.
In a small bowl, cream butter, peanut butter, granulated sugar and sugar brown. Beat the egg and vanilla into cream mixture. In another bowl, combine flour, oats, baking soda and salt, gradually add cream mixture mixing well. Add the cereal. Drop dough by rounded teaspoonfuls, about 3-inches apart on ungreased baking sheets. Dip a fork into flour and flatten each cookie a little. Bake at 350 degrees for 9 to 12 minutes until lightly browned. No more baking. Allow to cool 5 minutes before removing from cookie sheets. Complete cooling on wire racks.
