Here's a little about Hervé Martin, chef and owner of the Hermitage restaurant in Vancouver.

Hervé Martin, Chef / Owner Restaurant Ermita training in France for eight years to reach the level of Executive Chef. In their attempt to reach this position, Hervé also trained as a pastry chef and a butcher Prior to serving as private chef to King Leopold of Belgium. He has worked in some of the finest 3 star Michelin restaurants in Europe and then became the executive chef at some of the best hotels in Europe, USA and Canada. Included in this category were the Palace Hotel in the South of France and Ireland, Hotel Plaza de la Chaudiere in Hull, Quebec, King Edward Hotel in Toronto, the Hotel Westbury in New York and the Palace Hotel in Philadelphia. In 1985 Hervé Martin arrived in Vancouver to open the Pan Pacific Hotel. During his three years at the Pan Pacific, several things happened: the opening of the Pan Pacific was a success, Hervé and his culinary team received many awards for various competitions, and decided to open his own restaurant, which making Vancouver home.

As a member of these societies recognition came with a reputation as the Chaine des Rotisseurs, the de'Or Confrérie du Sable, the prestigious "Confrérie des Chevaliers du Tastevin" and other associations, Hervé knowledge of French gastronomy and the different wines that work well with it are excellent.
