Cook vegetables according to package directions. Drain well. Place vegetables in a 9×13 inch pan. Cut the cheese into cubes and spread over vegetables. Melt butter. Crush thin crackers into crumbs and mix with butter and sprinkle with cheese. Bake at 350 degrees for 20-25 minutes.
BLACKBERRY CUPS
6 sheets of phyllo dough frozen thawed
Nonstick cooking spray
1 pint fresh blueberries
2 tablespoons Splenda
1 cup sugar-free Cool Whip
1 carton (6-oz) cream peach yogurt lite style
Preheat oven to 400 degrees. Salt 6 cups large cream.
Cut across the dough into 4 pieces of phyllo. Place 1 sheet phyllo dough on work surface, keeping remaining sheets covered with plastic and a towel wet. Lightly cover the first piece of sheet of phyllo dough with nonstick cooking spray and place in a cup of cream of great size. Place the second piece of sheet Above the glass piece, alternating corners, spray with cooking spray. Repeat with the other two parts, alternating corners. Repeat this process with the other 5 sheets of pasta in the remaining 5 cups of cream. Place cream cups on a baking sheet and bake about 15 minutes or until the pastry is golden. Let cool to room temperature.
While phyllo cups baking, combine blueberries and sugar in a small bowl and let stand for 15 minutes. Mix Cool Whip and yogurt in medium bowl. Reserve 1 / 2 cup berries for garnish. Fold remaining berries into yogurt mixture. Spoon mixture into the cooled phyllo cups. Garnish with reserved strawberries.
