Fresh air and hot apple fall desserts just seem to go hand in hand. If you are diabetic and looking for ways to enjoy autumn apple abundance, here are some recipes to try.
OVEN apples with caramel sauce
4 large baking apples
Cinnamon 1 / 2 teaspoon
Nutmeg 1 / 8 teaspoon
1 / 2 cup uncooked oats
1 / 4 cup raisins
2 tablespoons butter, softened
1 / 2 cup sugar, caramel without topping (Smucker has a good idea.)
Preheat oven to 400 degrees. Spray 8-inch with nonstick cooking spray for cooking.
Wash and core apples. Cut a small piece of background is needed to make apple juice to sit. In a small bowl, combine the cinnamon, nutmeg, oats, raisins and butter, mix well. Mix in apples stufff. Cover pan with foil and bake for 45-50 minutes until apples are tender. Remove from oven and drizzle caramel topping over apples. Serve hot.
BAKED APPLE EASTER
3 blocks to cook medium size, peeled and sliced
Nonstick cooking spray for baking bread
1 cup flour
1 teaspoon baking powder
Salt 1 / 4 teaspoon
1 / 3 cup salt, unsalted butter
Splenda 1 / 3 cup
1 / 2 teaspoon lemon zest
1 / 2 teaspoon vanilla extract
1 egg
1 / cup milk 2 low-fat
Preheat oven to 375 degrees. Spray 8 inch square baking pan with cooking spray for cooking. Arrange apple slices in the bottom of the pan. Set aside.
In a small bowl, combine the flour, baking powder and salt. Stir mixture to blend well. Set aside.
In a medium bowl, combine butter, Splenda, peel and vanilla. Using an electric mixer, beat at medium speed until well blended. Add eggs and beat until light and fluffy. Add flour mixture alternately with milk, starting and ending with flour. Pour batter over apples and bake 40-45 minutes or until toothpick inserted in center comes out clean. Serve hot.
APPLE Dumplings
2 cups self-rising flour
Shortening 1 / 2 cup
3 / milk 4 cup low-fat
5 cups chopped apples
1 cup Equal Sugar Lite --
1 teaspoon cinnamon
Preheat oven to 375 degrees. Cut flour into shortening as if making a pie crust. Add milk. Do In and a mass shooting in a rectangle. Add Equal and cinnamon to apples and mix. Spread apple mixture over the dough. Roll up jelly roll style and slice. Place in a baking dish and pour the syrup over all. Bake 1 hour.
To make sauce: Bring to boil:
2 / 3 cup butter, 1 / 4 cup sugar, 1 1 / 4 cup Splenda and 1 1 / 2 cups boiling water
NOTE: The sauce in this recipe uses sugar 1 / 2 cup. You can substitute 1 / 2 cup mashed unsweetened apple or go with the sugar if you do not like the results of applesauce. However, be aware of this when fitting this recipe into your diet!
